Squashed Potatoes

Squashed (Mashed Potato)Taters

ACTIVE TIME: 20 minutes
TOTAL TIME: 30 minutes
EASE OF PREPARATION: Easy

1- Pkg (16oz) Frozen Butternut Squash - cubed
1 - Pkg (16oz) Frozen Cauliflower - chopped
2 - Med (5.3oz) Russet Potatoes - cubed
1 to 2 - Garlic Cloves - chopped finely
2 - Tbls Fat Free Half & Half
Salt/Pepper

Instructions:

Boil and Simmer Cubed Potato, Sqaush Cubes Chopped Cauliflower and Garlic Cloves till tender, approximately 20 min.
Drain, and put back into the drained pan and let them dry on the stove for a few minutes on low heat.
Mash well adding Fat Free Half & Half if needed, till smooth. A Kitchen-Aid mixer works well for this.

Season with the Salt and Pepper, adding more if desired. I did not use butter or sour cream when I made this. If you want you can add them if you think it needs it.
