Romaine Wedge with Creamy Homemade Blue Cheese Dressing

Ingredients:

Romaine Wedge:

2 hearts of romaine, quartered lengthwise and cores removed
1/4 cup chopped fresh chives
2 slices cooked Center Cut bacon, crumbled

Creamy Homemade Blue Cheese Dressing:

(makes 10 servings - 2 Tablesppons per serving)

3/4 cup Non-fat Plain Yogurt
1/4 cup Smart Beat Non-fat Mayonnaise Spread
1/2 packet Hidden Valley Fat Free Ranch Dressing Mix
1/4 cup Treasure Cave Reduced Fat Blue Cheese crumbles, seperate in 1/2

Directions:

Creamy Homemade Blue Cheese Dressing:


In a small bowl add yogurt, mayo, ranch dressing mix. Mix well.. add the seperated 1/2 of the blue cheese crumbles.
Chill. Store in an airtight container in the refrigerator. Remaining 1/2 of blue cheese will be sprinkled on top of wedge.

Romaine Wedge:

Place 2 romaine quarters on each of 4 salad plates. Sprinkle with chives, bacon and blue cheese. Drizzle with one serving of Creamy Homemade Blue Cheese Dressing.
