Oven Baked Frittata

Ingredients:

1 cup of eggBeaters, egg substitute
6 slices of Oscar Mayer Ready to Serve Canadian Bacon
1/2 cup green pepper, diced small
1/2 cup red peper, diced small
1/2 cup green onion, sliced small
1 jalepeno pepper, chopped small
2 teaspoon italian seasoning
4 tomato slices, cut in 1/2
2 Weight Watchers Cheese slices
garnish - fresh parsley

Directions:

Preheat oven to 350 degrees.

In a bowl add egg substitute, green peppers, red peppers, green onion, jalepeno and italian seasoning, mix with fork. Pour 1/2 of
mixture into an oven proof baking dish (I used a one cup size), repeat for second serving in a second dish.

Pre-bake in the microwave for 2 - 1 minute intervals on full power. Remove from microwave and top each dish with a slice of cheese,
and 4 - 1/2 tomato slices. Transfer to oven on a baking sheet, and bake for about 10 minutes until
bubbly warm. Serve in baking dish on a plate garnished with parsley.

Optionally add 1 cup of blackberries as a side dish.
