Grilled Smashed Potatoes
Ingredients:
8 Baby Red Potatoes, (approx 2.5 oz each), rinsed
Fresh Chives
Salt and Pepper
optional - olive oil (great use for your daily oil)
Directions:
Pierce each potato with a fork. Place in microwave and cook on high for 4 minutes. Check to see if they are tender.
Turn the potatoes over. Repeat with one minute intervals until cooked throughout. Set on counter to cool.
Preheat the grill.
Now the fun part.. with the palm of your hand literally "smash" the potato (not too agressively as you want it to remain
in one piece!) Place the smashed potatoes on the grill, give a light char and flip it over and repeat on other side.
Add snippets of fresh chives. Salt and Pepper and serve right from the grill.
