Coney Island Omelet Ingredients: Non Stick Cooking Spray 1 cup EggBeater egg substitute, divided in half 2 Oscar Mayer 98% Fat Free Wiener made with turkey 1/4 cup red onion, finely diced, divided in half 1/4 cup yellow bell pepper, finely diced, divided in half 1/4 cup pineapple, finely diced, divided in half 1/4 cup Salsa - I used Tomato, Chipolte, Corn Salsa, divided in half 4oz Broccoli Cole Slaw, divided in half Mrs Dash Salt Free Table Seasoning - Table Blend Fresh Ground Pepper Directions: I use the microwaveable omelet shell when making my omelets, for a fast and easy fluffy omelet. Wrap both wieners in a paper towel and zap in the microwave for 45-60 seconds on high. Remove and let cool abit until you can comfortably cut them into small 1/2" sections. Each omelet will use one wiener. Lightly spray omelet shell on the inside with non stick spray. In the shell bottom add eggbeater, wiener. red onion (reserving a tad to top on omelet), bell pepper, and pineapple. Season with Mrs Dash and pepper. Close the shell lid and put in microwave. Zap for 60 seconds and repeat again for 60 seconds on high. Remove to plate and garnish on the side with broccoli slaw and top with salsa. Repeat technique for second omelet.
