If you are looking for healthy meals to have with holiday turkey.. this lighter version of a Waldorf Salad is
perfectly accented with lean white roast turkey meat. Crispy greens and crispy celery and apple and the sweet
flavors of the apple and berries with the simple citrus mayo makes this a very smart and satisfying salad. For a portable
on-th-go version.. to work or party, pack up the salad (wrap the berries in plastic lay on top) take the dressing on the side and
put it together just before serving.

Waldorf Turkey Salad

Ingredients:


6 cups of fresh crisp mixed greens
6 oz roast turkey, lean white meat
1 medium apple, peeled, sliced
1/2 cup celery, sliced
1/2 cup raspberries

Dressing:

1/4 cup Smart Beat Nonfat Mayonnaise Dressing
2 Tbls Orange Juice, fresh squeezed
1 Tbls lemon Juice, fresh squeezed
1 tsp Splenda

Directions:

Mix all for ingredients of dressing in a small bowl. Refrigerate to chill.
Rinse mixed greens, spin to dry in salad spinner. Place greens in a large salad bowl. Add turkey apple and celery. Add
dresing to salad and toss. Plate (2 servings). Top each with 1/4 cup raspberies.
