This salad moved right to the top of my favorites chart!! I am a big fan of freah berries and fruit in the season.
This is a salad that will be a full meal by adding shredded chicken breast and will satisfy any warm day cravings.

Strawberry Poppyseed Salad.. with Chicken

Ingredients:

2 chicken breasts, skinless, boneless
1 tablespoon dried onion flakes
2 Romaine Hearts, cleaned and broken into bite size pieces
1 cup Strawberries, cleaned, sliced
1/2 cup Blueberries, rinsed
1/2 cup Pineapple, sliced rather small
2 cups Del Monte No Sugar Added Mandarin Oranges, drained
1/4 cup Slivered Almonds

4 tablespoons Poppyseed Dressing (recipe below) or
add 30 calories and use Maple Grove Farms No-Fat Poppyseed Dressing


Directions:

In a medium saucepan add 2 cups of water and onion flakes. Add chicken breasts and bring to a boil. Let boil until internal temperature reaches 185°. Remove chicken to a plate to cool. Shred chicken. Weigh into 3 oz portions.

In a large bowl combine roamine, strawberries, blueberries, pineapple, mandarin oranges, and slivered almonds. Toss salad with poppyseed dressing (or serve on the side). Serve salad in large salad dish and add chicken to the top.

Poppyseed Dressing:

this batch will yield approx 8 servings - refrigerate in air-tight container

1/2 cup cider vinegar
1/4 cup white balsamic vinegar
1 mini cube of Knorr's onion seasoning
6 packets of Splenda with Fiber, sugar substitute
1/2 teaspoon dried mustard
1/8-1/4 teaspoon Bob's Red Mill Xanthan Gum
1/2 teaspoon poppyseeds

Poppyseed Dressing Directions:


This is a quick and easy dressing. If you haven't used Xanthan Gum.. it is a fine powder that is added as a thickening
agent. Start with the smaller amount and add if needed. Found in natural and health food stores, very low in calories and high in fiber. I find this a perfect job for my Magic Bullet processor.

Add all ingredients to the blender cup.. Process until well blended. Refrigerate dressing.
