I have always been one to "hurry" the next season.. and even more so now living in Palm Springs, CA where
the sun is so generous.. When I think of Springtime, my food thoughts and menu's want to shift to light, fresh
ingredients. The Produce Market and Saturday Open Air Markets become a regular stop. Take advantage of what's
in season and beautiful.. Expand your options and try new combinations.

Spring Salad

Ingredients:

One small head of butter/bibb lettuce
3 radishes, sliced thinly
large handful of fresh peas (about half a cup)
1/4 cup walnut pieces
1/4 cup goat cheese
3-4 strips of lemon zest
fresh chives
3 tsp olive oil
3 tsp golden baslamic vinegar

Dressing:
Whisk together some olive oil and golden balsamic vinegar and drizzle over the top . Salt and pepper to taste.

Directions:

Rinse and spin dry the butter lettuce cup. Divide salad toppings evenly over 6 lettuce cups. Drizzle dressing evenly
over each cup.
