Irish Soda Bread
Soda Bread has been a long time tradition for our Irish ancestors. It was developed out of neccesity as
an answer to how to make use of their wheat that was too "soft" to successfully make traditional yeast
breads. This
recipe has only four ingredients, however produces a very dense tasty bread. Variations can include
adding raisins, caraway, orange zests, etc.. however it then changes it's name from Soda Bread to "Spotted Dog".
The
whole
wheat pastry flour is the closest we have available to the flour that was originally used.. and is very
very similar.. and quite high in fiber compared to others.
Great served with Irish Stew.

| Irish Soda Bread
Ingredients:
2 cups Hodgson Mill or Bob's Whole Wheat Pastry Flour
1 cup fat free buttermilk
1 tsp salt
1 tsp baking soda
Non-stick cooking spray
I Can't Believe it's Not Butter Spray
or add a POINT* for 1Tblsp of I Can't Believe it's Not Butter LiteSpread
Directions:
Preheat the oven to 425 F. degrees. Lightly spray (with non-stick cooking spray) and flour a cake pan. In a large
bowl sift and combine all the dry ingredients. Add the buttermilk to form a sticky dough. Place on floured surface and lightly knead (too much allows the gas to escape). Shape into a round flat shape in a round cake pan and cut a
cross in the top of the dough. Cover the pan with another pan or lid and bake for 30 minutes. Remove cover and bake
for an additional 15 minutes. The bottom of the bread will have a hollow sound when tapped to show it is done.
Cover the bread in a tea towel and lightly sprinkle water on the cloth to keep the bread moist. Let cool and you are ready to have a "buttered" slice with a nice cup of tea or coffee.
