French Toast with PB2 and Caramelized Banana
Ingredients:
4 slices of Orowheat Double Fiber Bread
1/4 cup Egg Substitute
2 Tbls Non Fat Half & Half
Salt/Pepper
Dash of Ground Cinnamon
Non-stick Spray
Topping:
2 Tbls PB2 (Powdered Peanut Butter) reconstituted with water
1 medium Banana, cut in 1/2 lengthwise, and quartered
1/2 c Sugar Free Maple Flavor Syrup
Garnish:
2 Tbls Fat Free Whpped Topping
Sprinkle of Ground Cinnamon
Directions:
Heat oven to 300°. In a flat dish pour egg substitute, non fat half & half, salt/pepper, and cinnamon. Heat skillet and use
non-stick spray to a med/high temp. Dip bread slice in egg mixture and brown in skillet. Keep warm in oven on an oven
safe dish.
In skillet heat syrup to carmelize banana slices.
To serve, slice bread slices in half diagonally, position on plate. Spread Peanut Butter between slices. Top with Carmelized Banana and Syrup. Garnish with Whipped Topping and a Sprinkle of Cinnamon.
