Grocery Deli Sushi - California Rolls


Again.. planning and preperation are our "friends".. When I know that I plan to be away for the day or "out of my "controlable
surroundings, such as travel... I try and make sure that I have a bag of non parishable foods and drink that I can fall back on
to help avoid the more "dangerous" options... When a grocery is handy, many have deli's and prepared foods such as fresh
sushi which is a terrific portable alternative, healthy and filling. Tap into your Back Up sack for rounding out your
nourishment needs, and off you go!!

Sushi - California Rolls

Ingredients:

2 cups rice, calrose
5 1/4 cups water
1/4 cup Mitsukan rice vinegar
10 sheets nori seaweed sheets
1 cup pickled daikon, (chili radish)
1 bunch green onions
2 avocados
1 cup salmon, smoked
1 capsicum, red
1 cup ginger, pickled
Wasabi paste or powder, (very hot- use with care)
Black sesame seeds
Sweet Japanese mayonnaise (recipe below)

Directions:

Wash rice thoroughly. Place in pot with water, cover and bring to boil. Stir once, then cover with tightly
fitting lid. Turn to lowest setting. After 18 minutes, turn off heat and allow to stand for 20 minutes.
Turn rice out onto tray and drizzle with rice vinegar and cool.
Cut all other ingredients into fine strips. Place rice along one side of nori sheet, place sliced ingredients and
flavorings (to your liking) on top and roll up firmly. Repeat with other nori sheets.
Chill and slice into serving size pieces or serve each sheet as one roll.

Notes: It is traditional to offer wasabi paste as an extra condiment.


Sweet Japanese Mayo

Ingredients:

2 cups Non-fat Smart Beat Mayonnaise
1/2 cup water
1 teaspoon Splenda
1/4 teaspoon salt
1 teaspoon garlic juice
3-4 teaspoons ketchup
1 teaspoon ground ginger
1 teaspoon hot sauce
1 teaspoon dry mustard
1 teaspoon paprika
3/4 teaspoon white pepper

Directions::

In bowl, mix all ingredients well.

Servings - Makes 10 servings
