Healthy Breakfast in Bed

Soft Boiled Egg and Cinnamon Tea
Makes 2 servings
Ingredients:

2 eggs, soft boiled 3 minutes
Cinnamon Tea, freshly steeped

Directions:

Serve egg in an egg cup with a beautiful china placesetting, aside a vase of fresh flowers, and freshly steeped tea pot of yummy tea... and a lacey cloth napkin!

Berry Kabob
Makes 2 servings
Ingredients:

3 cups strawberries, hulled and left whole
1 cup large seedless grapes
2 oz Jarlsberg light cheese, cut into 8 pieces

Directions:

Thread ingredients onto 4 small skewers. Serve with a vanilla enhanced fresh brewed cup of coffee.


Spinach Omelet

Makes 2 servings
Ingredients:

1 cup of Egg Beaters egg substitute
non-stick spray
2 large handfuls of fresh baby spinach, rinsed
1/4 cup green onions, finely sliced
1 slice of Weight Watchers Cheese, split in half
4 Tbls of salsa
Salt/Pepper to taste
1 Orowheat Double Fiber English Muffin, split in half

Directions:


Put spinach and opnions in a glass bowl and microwave for one minute. With kitchen shears, cut cooked spinach into smaller pieces. In a non-stick skillet, spray with non-stick spray, at medium high heat use 1/2 cup of the egg beater in the pan using a silicone spatula to gently lift the edges and allowing the uncooked egg beaters to "spill" over to completely cook the egg. Add 1/2 of the spinach/egg to the omelet, add the 1/2 cheese slice and fold into an omelet, topping with salsa. Serve with english muffin half. Repeat for 2nd omelet.
