Breakfast Burrito

Ingredients:

Make up the day prior:
To make strained nonfat yogurt.. which ends up to yield a spreadable cream cheese like product, take a coffee filter
and line a strainer, place over a bowl and refrigerate overnight. Drain away any liquids. Will yield about 50% of amount you started with.

2 Flatout Flatbread - Healthy Grain - Multi -Grain with Flax
1 cup eggBeaters, egg substitute
1/2 cup Nonfat Refried Beans
1/4 cup strained nonfat yogurt (see above) or substitute fat free cream cheese
1/2 cup tomato, diced
1/2 cup green onions, sliced, seperate 1/2 for garnish
1/2 cup cilantro, torn, seperate 1/2 for garnish
1/2 cup salsa
Fat-free non stick cooking spray

Directions:

If you wish to create your own strained yogurt, I suggest you prepare this the night prior, as instructed above. It
creates a very nice spreadable cream cheese like spread.

In a non stick skillet, spray lightly with non stick cooking spray. Saute green onions, cilantro, and tomatoes lightly.
Add egg substitute and scramble.

On a flat counter surface layout the two flatbreads. Put 1/2 of the scrambled egg mixture in the center of each flatbread. Add 1/2 of the remaining ingredients to each burrito. Roll in a burrito style fold. In a heated non stick skillet sprayed lightly with non stick spray place burrito's fold down for about 3-4 minutes. Turn and heat until lightly browned. Serve on plate. Garnish with salsa and remaining green onions and cilantro.
