Speaking of favorites this week... This Hearty Healthy Black Bean and Cheese Omelette is definate
favorite for me.. during the holidays and year round. Simple to put together, fast in the microwave.. and filled with
Filling Foods™ to get you started with a great start of your day and a long lasting meal to keep you going strong
until mid-day. Stove top preperation works well, however I love the microwave "omelette clamshell" that turns your fluffy
omelette out in just 2 minutes.

Hearty Healthy Black Bean & Cheese Omelette
Ingredients:
non-stick cooking spray
1/2 cup Egg Beaters, non fat egg substitute
1/4 cup canned black beans, drained and rinsed
1 slice of Weight Watchers Singles, american reduced fat cheese
2 Tbls. cilantro, chopped
2 Tbls. jarred, deli-sliced peperoncini
1/8 cup salsa
2 Tbls green onion, sliced
salt/pepper to taste.
Directions:
Spray insides of the microwave omelette clamshell with non-stick cooking spray. Into the bottom half of the
clamshell
pour the egg substitute, salt/pepper, black beans, peperoncini and cilantro. Close the clamshell lid
and place in microwave
for 90 seconds. Remove from microwave. Open lid and add slice of cheese to the top
of the omelette. Close lid
and place
back in the microwave and heat for 30 secons. Serve on plate, topped
with salsa and green onion.
