Keeping in theme with yesterday... my focus this week at my home has been to keep my shorter days of daylight
with a positive, healthy, and sunny feel. This simple, satisfying, smart.. Avaocado Shrimp Salad makes a great lunch entree
or dinner salad... and it's also a wonderful Core Food recipe. a great make ahead in the morning, and having it chill, and ready
when you get home.

Avocado Shrimp Salad
PREP TIME: 10 minutes
TOTAL TIME: chilling time (1-2 hours)
EASE OF PREPARATION: Easy
Servings - Makes 8 servings

Avocado Shrimp Salad
Ingredients:
4 Tbls Smart Beat Nonfat Mayonnaise dressing
2 Tbls fresh lemon juice
1/8 tsp dried dill
salt and ground black pepper to taste
1-3/4 pounds cooked shrimpmeat, rinsed, patted dry
3 large radishes, sliced
8 Napa Cabbage Leaves
2 avocados - peeled, pitted
optional garnish: snips of fresh chives
Directions:
In a small
bowl whip together mayonnaise, lemon juice, dill, salt and pepper.
In a non metal bowl add shrimpmeat, radishes and mayonniase mixture. Chill in refrigerator for 1-2 hours.
Slice avocado, divide into each one into quarters, set aside
Arrange cabbage leaves
on serving platter. Top each leaf with 1/8th of shrimpmeat mixture (approx 3/4 cup).
Garnish with snips of fresh chives.
