One of our favorite Food Finds of the year was when we had a weekend getaway this late spring to the wine country
in Temecula, Calironia. In Old Town Temecula we spotted an quaint little country shop with it's shingle hanging, offering
Olive Oil tasting. We entered the cafe/gift shop and were invited to "belly up" to the bar.. where we enjoyed the sampling
of several of their delicious olive oils, also while learning about the passions of the grower/olive oil maker and family.
This holiday we are sharing our find with gift packs of olive oils and olives from the Temecula Olive Oil Company

Chef Stephen's Citrus Dressing
.. one of our quick and tasty favorite salad toppers.. One 1Tbls serving uses up one healthy oil.

Ingredients:


1 medium orange, squeezed (yields about 1/4cup)
1/2 medium lemon, freshly squeezed (yields about 1 Tbls)
1/4 cup red onion, finely chopped
1/4 cup Temecula Citrus Olive Oil
1 Tbls honey mustard
1 tsp kosher salt or 1/2 tsp table salt
1/4 tsp ground pepper

In small glass bowl combine juices of orange and lemon, onion, olive oil, mustard, salt and pepper. Whisk to combine the ingredients. Store in refrigerator in a air tight container.

Roasted Red Pepper and Olive Tapas

1/2 cup(s) canned artichoke hearts, without oil
1/2 cup(s) canned chickpeas
12 medium olive(s)
1 tbsp shallot(s)
2 tsp capers
2 tbsp red wine vinegar
1 tbsp olive oil
1/2 tsp dried oregano
1/8 tsp black pepper
7 1/2 oz roasted red peppers
1 large garlic clove(s)
4 slice(s) Weight Watchers 100% Whole Wheat Bread

Directions:

Preheat oven to 350°F.

Combine artichokes through black pepper in a food processor. Pulse on medium speed until very smooth, about 10 to 15 seconds. Transfer mixture into a bowl and set aside.

Cut red peppers into medium-small pieces, about 2 inches long.

Slice each piece of bread diagonally into 2 triangles. Place all triangles directly on oven rack and toast until crisp, about 5 to 7 minutes. Remove from oven and arrange on a platter. Rub raw garlic clove, cut-side-down, a few times across each toast point, and spread olive mixture evenly onto toast points. Place 1 to 2 pieces of red pepper atop each toast point before serving. Yields 2 pieces per serving.
