Country Skillet Taco

Ingredients:

Nonstick Cooking Spray
6 slices of Oscar Mayer Fully Cooked Canadian Bacon
2 medium Yukon Gold Potatoes
1 cup EggBeaters Original, egg substitute
Sea Salt and Fresh Ground Pepper
4 Corn Tortilla’s
4 tablespoons Fresh Pico de Gallo
4 tablespoons Green Onions, chopped
2 cups Strawberries, rinsed, sliced

Directions:

To make hashbrowns, cook potatoes in microwave for 3-4 minutes, then check for firmness. You want the potatoes to be cooked throughout, but not overdone. Microwave again at one minute intervals to achieve doneness. Peel and cube the potatoes. Lightly spray nonstick skillet with cooking spray and heat to medium high heat. Cook potatoes, add salt and pepper, until lightly golden brown.

In a nonstick skillet lightly brown the canadian bacon. When heated throughout, remove from the skillet and slice into strips. While skillet is hot place tortilla’s in the skillet to warm and slightly brown on both sides.

In a microwavable bowl lightly spray the inside of the bowl with cooking spray. Add eggbeaters, salt and pepper. Heat at full power in microwave for 2 minutes, remove, stir with fork, return to microwave and heat again in one minute intervals, stirring each time until cooked throughout. They will be light and fluffy.

To built taco, plate the tortilla, top with 1/4 of the potato, 1/4 of the egg beaters, 1/4 of the canadian bacon slices. Top with pico de gallo and green onions. Garnish with 1/2 cup of strawberries.

Twice Baked Potato with Shrimp 

Ingredients:

4 7oz Russet Potatoes, baked
1/4 cup Green Onions, finely sliced, reserve 1 teaspoon for garnish
1/4 cup Nonfat Yogurt
1 teaspoon Garlic Powder
Salt/Pepper
1/4 teaspoon Pico de Gallo Pico Limon seasoning
1/4 teaspoon Smoked Paprika
2 tablespoons Bacon Bits
4 teaspoons Kraft Reduced Fat Parmesan Style Grated Topping
8oz Shrimp, cooked, coarsely chopped, reserve 8 shrimp for garnish
1 cup white Kidney Beans, drained and rinsed

1/3 cup Nonfat Cheddar Cheese
Crisco Butter Spray No Stick Cooking Spray
Garnish – Chives and Whole Shrimp, and Fresh Basil

Directions:

Preheat oven to 400 degrees. I generally start the potatoes cooking in the microwave.. to give them a headstart.  On high for 2 – 3 minute intravals. Then move to the oven to finish. When baked throughout, about 25 minutes, cut in half lengthwise. Let cool to touch. Reduce heat in oven to 300 degrees.

Scoop the potato into a large bowl, leaving some of the potato to hold the shape of the shell. Add the green onions, nonfat yogurt, garlic powder, salt and pepper to taste, seasonings, bacon bits, parmesan, shrimp, and beans. Mash with a potato masher.

Divide the mashed potato evenly into the 8 potato halves, placing them on a cookie sheet. Top each of the halves with equal amounts of the nonfat cheddar cheese , and give a quick spray of the butter cooking spray. Put back into the oven for about 8-10 minutes, then under the broiler for a quick 1- 2 minutes to get a golden brown. Serve with a garnish of chives and fresh basil.

Ingredients:3 cups of Swansons 99% Fat Free Low Sodium Chicken Broth
2 pounds of Yukon Gold Potatoes, coarsely cubed
1 large leek, slicing the bulb and light green part into thin rings
1 teaspoon peppercorns, whole
2 bay leaves
1 teaspoon salt
additional salt to taste is optional
Tabasco sauce to taste is optional.. but we like the kick it gives!
1 cup Land o Lakes Non Fat 1/2 & 1/2, divided into 3 – 1/3 cups
optional garnish – fresh basil leaves,fresh parsley, or fresh dill
Servings – Makes 6 servings

Directions:

In a 4qt soup pot put broth, potatoes, leek, peppercorns, bay leaves, salt. Cover and heat to a boil. Reduce to a
simmer and continue to simmer for 30 minutes. Remove from burner and let cool for about 30 minutes. Divide the
soup into 3 equal smaller batches. Be sure to remove the bay leaves.

 

In a blender put one of the “smaller batches” and add 1/3 cup of the 1/2 & 1/2. Now is a good time to put a clean
towel and hand on top of the blender as the soup will expand and it is blended. Blend on high for three minutes.
Pour into a container that will be refrigerated to chill. Repeat the same step for the 2 additional “smaller batches”.

Once chilled you can taste for optional salt needs, and whether to add the optional “kick” of the tabasco. (If you
need to “hurry” the chilling process, you can pour the soup into a flat casserole dish and position in the freezer
until chilled.)

Serve in a delicate glass dish, or martini glass. Garnish with fresh basil leaves, parsley, or dill.
