Shrimp Cocktail

Ingredients:

7 Jumbo Shrimp (cooked, peeled & cleaned, tail-on approx 3oz)
romaine, shreaded
1/4 cup cocktail sauce (see recipe below)
lemon slices

Cocktail sauce:

Ingredients:

1/4 cup of ketchup
1 teaspoon horseradish (or to taste)
squeeze of fresh lemon

Directions:

Thaw shrimp, if frozen in a strainer in your sink.

Combine ketchup, horseradish, and lemon into a small dish and mix well.

In a cocktail glass, line with shreaded romaine. Top with cocktail sauce. Arrange shrimp on lip edge of glass, and garnish with lemon slices.

Drinking of beer, green and otherwise is definitely part of the rituals involved with this holiday. There is more beer consumed in Ireland on St. Patrick’s Day that there is on any other day of the year. This may well be because of St. Patrick’s Pagan based practice of honoring Brigid with “poteen,” which is an Irish beer made from potatoes. St. Patrick, by the way, is also credited as bringing the art of distillery to Ireland.

Ingredients:

12 oz Miller 64 Beer
2 drops green food coloring

Directions:

In an iced mug.. drop 2 drops of green food coloring into mug, add beer, and stir. Serve Green and chilled.

Celtic Mix Cocktail

1 1/2 oz. Scotch
1 oz. Irish whisky
1/2 oz. Lemon juice
Dash of bitters

Combine all the ingredients in a shaker filled with ice, stir well and pour into a martini glass.

Irish Buck

1 1/2 oz. Irish Whisky
Diet Ginger Ale
Lemon peel

Pour whisky into a highball glass filled with ice, twist the lemon peel over the glass and drop in the glass and fill with ginger ale.
