Honey Yogurt Parfait

Ingredients:

1 cup Nonfat Plain Yogurt
2 tablespoons Honey
1 cup Fiber One cereal, divided in two
1 cup Blackberries, rinsed, divided in two
1 1/2 cup Raspberries, rinsed, divided in two
1 oz Slivered Almonds, toasted, divided in two
Garnish – Fresh mint

Directions:

In a non stick skillet on low heat, toast the slivered almonds 1-2 minutes, watch carefully. (Optional add on, adds 1 POINT®)

In a medium size bowl put yogurt and honey and mix well.

In a goblet layer 1/4 cup nonfat plain yogurt, 1/4 cup fiber one cereal, 1/4 cup blackberries, 3/4 cup raspberries. Repeat for a second layer, Optional: top with 1/4oz toasted slivered almonds. Garnish with fresh mint.

Ingredients:

2 small Bananas, sliced
1 box JELL-O brand Sugar Free Fat Free Vanilla Instant Pudding
2 cups Nonfat Milk, chilled
8 Vanilla Wafers
1 cup Nonfat Whipped Topping, divided (4 tablesppons per dessert)

Directions: per dessert glass

Prepare vanilla pudding according to package instructions with 2 cups of chilled nonfat milk. Per dessert you will be using 1/4 of the pudding mix.

Cut half of 1 small banana into slices.

Layer 1 (5-oz.) glass with 1 1/2 tablespoon thawed nonfat whipped topping, one-fourth of banana slices, 1/4 cup prepared vanilla pudding, another fourth of banana slices, and 1 vanilla wafer. Repeat. Dollop with 1 tablespoon thawed nonfat whipped topping.

How do I serve my Ham?
Spiral Cut Bone-in-half, Hickory cured Hams are fully cooked and ready to serve. Often recommended serving them at
room temperature. Just take them out of the refrigerator approximately 45 minutes prior to serving and allow the ham
to reach room temperature.

If you prefer to heat your Ham, pre-heat your oven to 250 degrees. Wrap your ham in foil leaving a small opening at
the top. Place a shallow pan of water on the rack below the ham to help maintain moisture. Heat your Ham for approximately 30 to 45 minutes. Be careful not to overheat. This will cause the ham to dry out.

How do I slice my Ham?
Bone In Ham: Your bone in ham is already spiral sliced to the bone for easy serving. Take a sharp knife and cut around the bone on the face of the ham. Cut along the natural muscle line. Finally, cut from the bone straight down to the bottom of the ham. Remove slices from the bone and serve.

Boneless Ham: Place the ham face down on the cutting surface. Take a sharp knife and cut straight down. Best of all, boneless ham allows you to choose the thickness as you slice it.

How much ham do I need to serve my guests?
Consider first how many guests you will be serving and check our guideline below. Be sure to take into consideration whether you are counting a lot of hearty eaters or small children. Also if you are serving a second entree you may want to use the buffet serving suggestions.

Twice Baked Potato with Shrimp 

Ingredients:

4 7oz Russet Potatoes, baked
1/4 cup Green Onions, finely sliced, reserve 1 teaspoon for garnish
1/4 cup Nonfat Yogurt
1 teaspoon Garlic Powder
Salt/Pepper
1/4 teaspoon Pico de Gallo Pico Limon seasoning
1/4 teaspoon Smoked Paprika
2 tablespoons Bacon Bits
4 teaspoons Kraft Reduced Fat Parmesan Style Grated Topping
8oz Shrimp, cooked, coarsely chopped, reserve 8 shrimp for garnish
1 cup white Kidney Beans, drained and rinsed

1/3 cup Nonfat Cheddar Cheese
Crisco Butter Spray No Stick Cooking Spray
Garnish – Chives and Whole Shrimp, and Fresh Basil

Directions:

Preheat oven to 400 degrees. I generally start the potatoes cooking in the microwave.. to give them a headstart.  On high for 2 – 3 minute intravals. Then move to the oven to finish. When baked throughout, about 25 minutes, cut in half lengthwise. Let cool to touch. Reduce heat in oven to 300 degrees.

Scoop the potato into a large bowl, leaving some of the potato to hold the shape of the shell. Add the green onions, nonfat yogurt, garlic powder, salt and pepper to taste, seasonings, bacon bits, parmesan, shrimp, and beans. Mash with a potato masher.

Divide the mashed potato evenly into the 8 potato halves, placing them on a cookie sheet. Top each of the halves with equal amounts of the nonfat cheddar cheese , and give a quick spray of the butter cooking spray. Put back into the oven for about 8-10 minutes, then under the broiler for a quick 1- 2 minutes to get a golden brown. Serve with a garnish of chives and fresh basil.

Eggs Benedict TMG-style

Ingredients:1 cup of Egg Beaters Original, egg substitute
2 green onion, finely sliced
1 Orowheat Double Fiber English Muffin, split in half
6 slices Oscar Meyer Ready to Serve Canadian Bacon
Garnish – Fresh Cilantro leaves

Hollandaise Sauce:

1/3 cup Land o Lakes Non Fat 1/2 & 1/2
1 tablespoon flour
1 tablespoon Lemon Juice
2 drops Yellow Food Coloring
Salt/Pepper to taste
Dash of Tabasco Sauce

Directions:

In 4- 3/4 to 1 cup pyrex oven safe glass bowls put 1/4 c of egg beaters into each container. Add green onions and salt and pepper to each. Microwave 2 at a time for 2 minutes.. in one minute intervals. In a non stick skillet heat the canadian bacon. Toast english muffin and then again divide in 1/2. Plate in an oven-safe dish the divided english muffin and on top of each section 1-1/2 of the canadian bacon slices and one of the cooked “eggs”. Keep the plate warm in
the oven on low heat while making the hollandaise sauce.

Sauce:

In a 2 cup glass pyrex measuring cup pour 1/3 cup of non fat 1/2 & 1/2. Add flour and food coloring. Whisk well.
Heat in microwave for 2-3 minutes.. in one minute intervals.. whisking between intervals. Add lemon juice, salt and tabasco.

Remove warmed plates from oven with a hot pad. Top your Eggs Benedict with the Hollandaise. Garnish with cilantro leaves. Salt and Pepper to taste.. ENJOY!!

Green Grape and Apple Sangria Sorbet

Ingredients:

3/4 pound green grapes
2 small Granny Smith Apples
1 small Granny Smith Apple, to create garnish curls and lemon juice***
¼ cup packed mint leaves
20 drops Stevia Clear® Liquid Stevia, sugar substitute
1 (500g) vitamin C tablet, crushed to a powder*
2 cups dry white wine**
½ cup water

Directions:

Core, remove seeds and cut the apples into 1 inch chucks. Remove the grapes from the stems and cut larger grapes into halves.

In a medium saucepan, bring the white wine, water and sugar substitute to a boil. Once boiling, add chunks of apples and grapes. Reduce the heat to low.

Simmer the apples and grape mixture for about 5 minutes or until the grapes are soft and cooked through.

Remove saucepan from the heat and add the mint leaves and crushed vitamin C tablet. Let the mixture steep until it reaches room temperature.

Puree the mixture in a blender or food processor and then press the grape/apple puree through a fine mesh strainer.

Chill the strained mixture thoroughly in the refrigerator and then freeze it in your ice cream maker according to the manufacturer’s instructions.

Garnish with apple curl.

*The vitamin C helps maintain the vibrant green of the sorbet.
**I used a Pinot Grigio, but you can use any dry white you enjoy drinking.
***with a channel cutter or peeler create strips and curl around toothpick and float in lemon juice to keep from turning dark.

Ingredients:

4 cups Organic No-Chicken Broth Fat Free
2 tablespoons shallots, chopped
1 cup onion, chopped
1/4 cup Brown Rice, dry
1 cup Fresh Asparagus, cleaned, cut into 2″ lengths
1 cup Green Peas, fresh or frozen
1 cup Fresh Fava Beans, peeled
Salt/Pepper to taste
6 teaspoons Kraft Reduced Fat Parmesan Style Grated Topping
Non stick cooking spray

Directions:

Prepare rice per packaged instructions.

Par boil asparagus, fava beans, and peas.

In a non stick skillet, lightly spray with non stick cooking spray over medium to high heat add onions and shallots and cook until tender and slightly brown.

In a 4qt soup pot add broth, onions and shallots, rice, asparagus, peas, and fava beans. Heat throughout. Serve in a bowl and top with parmesan.

Grilled Asparagus

Ingredients:

1 pound Fresh Asparagus, cleaned
1/2 cup *TMG Vinaigrette

*Vinaigrette
4 teaspoons olive oil
2 tablespoon non-seasoned rice wine vinegar
2 tablespoon Temecula Pomegranate Balsamic
2 tablespoon Dijon mustard
Salt and pepper

 

 Directions:

Use a “vegetable screen” on your grill (to keep the spears from falling through) Heat grill to a medium to high temp (approximately 350 degrees). Lay the asparagus direct and evenly spread across the heated “screen”. Let them grill
for 5 or 6 minutes, baste with vinaigrette. With tongs you will want to turn or roll the aparagus to get them grilled on
both sides. Repeat basting on second side. Serve right from the grill on a serving platter. Salt and Pepper to taste.
