Drinking of beer, green and otherwise is definitely part of the rituals involved with this holiday. There is more beer consumed in Ireland on St. Patrick’s Day that there is on any other day of the year. This may well be because of St. Patrick’s Pagan based practice of honoring Brigid with “poteen,” which is an Irish beer made from potatoes. St. Patrick, by the way, is also credited as bringing the art of distillery to Ireland.

Ingredients:

12 oz Miller 64 Beer
2 drops green food coloring

Directions:

In an iced mug.. drop 2 drops of green food coloring into mug, add beer, and stir. Serve Green and chilled.

Here’s to a long life and a merry one.

Celtic Mix Cocktail

1 1/2 oz. Scotch
1 oz. Irish whisky
1/2 oz. Lemon juice
Dash of bitters

Combine all the ingredients in a shaker filled with ice, stir well and pour into a martini glass.

Irish Buck

1 1/2 oz. Irish Whisky
Diet Ginger Ale
Lemon peel

Pour whisky into a highball glass filled with ice, twist the lemon peel over the glass and drop in the glass and fill with ginger ale.

Green and Red Tomato Salad

Ingredients:

Salad:

1/2 head iceberg lettuce, rinsed, dried, cut into strips
1/2 head red cabbage, rinsed, dried, cut into strips
2 English cucumbers, peeled and sliced into 1/8-inch discs
4 medium red tomatoes, cut into wedges
4 medium green tomatoes, cut into wedges
2 green onions, sliced
1/8 slice cantaloupe, sliced thinly into 1/8-inch slices

Salad Dressing:

1/8 cup wine vinegar
1 shallot, quartered
1 garlic clove, lightly crushed, then minced
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup extra-virgin olive oil

Directions:

Through the feed opening of a running blender, add 1 at a time, the vinegar, shallot, garlic, salt and pepper. Then, leaving the blender running, add the olive oil in a thin stream. Dressing will yield enough for lightly coating the tossed salad and bottling and saving the rest in the refrigerator.

Toss together the lettuce, cabbage, green onions, cucumbers, and cantaloupe with 4 teaspoons of dressing to coat. Plate green and red sliced tomatoes fanned on the plate, and topped to the side with the salad, layering as a garnish the cantaloupe and cucumber. Serve family style with additional dressing on the side.

Chocolate and Pistachio Layered Pudding
Possibly a not so “traditional” Irish Dessert… but it sure looks fun to me.. and and with ease you can have for your family or guests a “look of the Irish” St Paddy’s Day, healthy low POINT® treat.

 Ingredients:

4 cups non-fat milk – divided
1 pkg (4 oz. serving size) Sugar Free – Fat Free Jell-O Chocolate flavored pudding & pie mix
1 pkg (4 oz. serving size) Sugar Free – Fat Free Jell-O Pistachio flavored pudding & pie mix
8 tbls light or fat-free whipped topping, aerosol or frozen, thawed

Directions:

In a medium mixing bowl, whisk together 2 cups of non fat milk with the dry chocolate pudding mix. Whisk until all clumbs are gone; approximate 2 minutes. In another mixing bowl, repeat the same process for the pistachio pudding. Let each of the puddings set for 3 minutes. In parfait glasses, pour in a small amount of the chocolate pudding. Carefully place the pistachio on top of the chocolate, repeat until you have the desired amount of layers. Top with whipped topping, if desired.
